Trust me when I say that these are going to, without a doubt, become your new favourite breakfast cookies. These babies are loaded with oats, whole wheat flour, flax seed, banana, almond butter as well as chocolate chips and they are actually amazing. Both my kids and husband ate the whole batch within two days! That’s right two days! Do you know how happy that made me? Especially considering that they thought they were eating just a regular cookie, whereas I knew that they were eating a nutrient packed cookie. So sneaky!
I so wish that I could take the credit for the recipe, but they were developed by our super talented friends, Dara and Erin from How to Eat. Dara and Erin are two food loving dieticians, who run a food blog together. Not only do they develop tasty, kid and family friendly recipes, they can also help you with meal planning & cooking services (amazing right!?).
We had the absolute pleasure of meeting them at a Canola Eat Well event (check out our post here), where we baked alongside Chef Claire Tansey and other amazing food bloggers. We learned about the benefits of integrating canola oil into our baking/cooking practices and the importance of understanding where our food comes from. Anyway, it was an informative and wonderful experience, but the best part was that we finally got to meet these two.

- 1 cup rolled oats
- ½ cup whole wheat flour
- ¼ cup ground flax seed
- 1 Tsp cinnamon
- ½ Tsp baking soda
- ½ Tsp salt
- 1 ripe banana (mashed)
- ½ cup almond butter (or tahini)
- ⅓ cup maple syrup
- ½ cup chocolate chips
- Preheat oven to 350 and line a baking sheet with parchment paper.
- In a large bowl, mix together oats, whole wheat flour, ground flax seed, cinnamon, baking soda, and salt. In a small bowl, whisk mashed banana, almond butter, and maple syrup.
- Add wet ingredients to dry and mix until well combined. Add chocolate chips and mix again.
- Using a ¼ cup measuring cup, scoop batter about 3 inches apart on baking sheet. Flatten cookies lightly with your hand. Bake for 15 minutes or until firm and brown around the edges.
- Let cool for five minutes on baking sheet. Remove to cooling rack and let cool completely.
