Caprese Salad screams summer! It is a quintessential summer salad that both my husband and I absolutely adore. The combination of home grown tomatoes and basil, with fior di latte cheese, drizzled with a a high quality olive oil and balsamic reduction is absolute and total deliciousness. Pretty sure that we have this on a weekly basis, if not more and never get sick of it. There is something to be said for fresh and high quality flavours, that when brought together bring out the best results.
What I love about making caprese salad is that it takes no time at all to put together. It’s just a matter of slicing the cheese and tomatoes and arranging everything on a large platter while alternating the ingredients. We have an absolutely incredible cheese store called the Cheese Boutique just a few minutes away from us and they literally carry the best cheeses from around the world, so we always get our fior di latte from there. So worth the extra few bucks to get a really high quality cheese, rather than the supermarket stuff, trust me.
When I am not serving this caprese salad on it’s own for a quick lunch, I pair it with our Mediterranean pasta or Sneaky Spaghetti & Meatballs for the perfect side. If you haven’t already tried this salad before, I strongly urge you to give it a try. Seriously delicious.

- 2-3 ripe tomatoes, sliced ¼ inch thick
- 15-20 fresh basil leaves
- 1 fior di latte (high quality), sliced ¼ inch thick
- Balsamic Reduction, for drizzling
- High quality olive oil, for drizzling
- Salt + Pepper, to taste
- On a large platter arrange tomato and fior di latter slices and basil leaves, alternating and overlapping them.
- Season salad with salt and pepper.
- Drizzle with balsamic reduction and olive oil.
- Serve immediately.
