  • 1 lb gnocchi (store-bought or homemade)

  • 1 tablespoon olive oil

  • 4 ounces pancetta, diced

  • 2 cloves garlic, minced

  • 2 cups cherry tomatoes, halved

  • Salt and pepper to taste

  • 1/4 teaspoon red pepper flakes (optional)

  • 1/4 cup grated Parmesan cheese

  • Fresh basil leaves for garnish

  • Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi to the boiling water and cook according to package instructions, or until they float to the surface. If using homemade gnocchi, they will cook faster, usually in about 2-3 minutes. Once cooked, drain the gnocchi and set aside.
  • Prepare the Pancetta and Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the diced pancetta to the skillet and cook until crispy and golden brown, about 5-7 minutes. Add the minced garlic to the skillet and sauté for 1-2 minutes, until fragrant.
