  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 3 ripe bananas, mashed

  • 1/3 cup Greek yogurt

  • 1/4 cup honey or maple syrup

  • 1/4 cup coconut oil, melted (or substitute with unsweetened applesauce)

  • 2 large eggs, lightly beaten

  • 1 teaspoon vanilla extract

  • Optional add-ins: chopped nuts, chocolate chips, or dried fruits

Directions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg until well combined.
  • Combine Wet Ingredients: In another bowl, mash the ripe bananas with a fork until smooth. Add the Greek yoghurt, honey or maple syrup, melted coconut oil, beaten eggs, and vanilla extract. Stir until all the wet ingredients are thoroughly combined.
  • Combine Wet and Dry Ingredients: Pour the wet ingredients into the bowl of dry ingredients. Use a spatula or wooden spoon to gently fold the mixture together until just combined. Be careful not to overmix; a few lumps are okay.
  • Add Optional Add-Ins: If desired, fold in any optional add-ins such as chopped nuts, chocolate chips, or dried fruits into the batter.
