  • 1 zucchini, diced

  • 1 cup cherry tomatoes, halved

  • 2 cups baby spinach leaves

  • Salt and pepper to taste

  • 1 teaspoon Italian seasoning

  • Grated Parmesan cheese for serving (optional)

  • Chopped fresh parsley for garnish (optional)

Directions

  • Cook the Italian Sausage: In a large skillet or frying pan, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage to the skillet, breaking it up with a spoon. Cook the sausage, stirring occasionally, until browned and cooked through, about 8-10 minutes. Once cooked, transfer the sausage to a plate and set aside.
  • Prepare the Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil if needed. Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent and fragrant, about 2-3 minutes. Add the diced potatoes to the skillet and cook, stirring occasionally, until they begin to brown and soften, about 8-10 minutes.
