  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 2 carrots, finely chopped or grated

  • 2 celery stalks, finely chopped

  • 1 zucchini, finely chopped or grated

  • 1 red bell pepper, finely chopped

  • 3 cloves garlic, minced

  • 1 pound ground beef (or a combination of beef and pork)

  • 1 can (14 ounces) crushed tomatoes

  • 1 can (6 ounces) tomato paste

  • 1 cup beef or vegetable broth

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and black pepper to taste

  • 1 pound pasta (such as spaghetti or fettuccine)

  • Grated Parmesan cheese for serving

  • Fresh parsley, chopped, for garnish

Directions

  • Sauté Vegetables: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion, carrots, celery, zucchini, and red bell pepper to the skillet. Sauté until the vegetables are softened, about 5-7 minutes.
  • Add Garlic and Meat: Add the minced garlic to the skillet and cook for another 1-2 minutes until fragrant. Then, add the ground beef to the skillet. Cook, breaking up the meat with a spoon, until it is browned and cooked through.
  • Prepare Sauce: Stir in the crushed tomatoes, tomato paste, beef or vegetable broth, dried oregano, and dried basil. Season with salt and black pepper to taste. Bring the sauce to a simmer.
