  • 8 ounces lo mein noodles or spaghetti

  • 2 tablespoons sesame oil

  • 2 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • 1 bell pepper, thinly sliced

  • 1 carrot, julienned or thinly sliced

  • 1 cup snow peas, trimmed

  • 1 cup broccoli florets

  • 1 cup sliced mushrooms

  • ½ cup sliced green onions (scallions)

  • ½ cup vegetable broth or water

  • 3 tablespoons soy sauce

  • 1 tablespoon oyster sauce (optional)

  • 1 tablespoon hoisin sauce

  • 1 teaspoon rice vinegar

  • 1 teaspoon cornstarch

  • 1 teaspoon sesame seeds (for garnish)

  • Sliced green onions (scallions) for garnish

Directions

  • Cook Noodles: Cook the lo mein noodles or spaghetti according to the package instructions until al dente. Drain and set aside.
  • Prepare Sauce: In a small bowl, whisk together the vegetable broth or water, soy sauce, oyster sauce (if using), hoisin sauce, rice vinegar, and cornstarch until well combined. Set aside.
  • Sauté Aromatics: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and ginger to the skillet and sauté for 1-2 minutes until fragrant.
  • Cook Vegetables: Add the sliced bell pepper, julienned carrot, snow peas, broccoli florets, and sliced mushrooms to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
