Ingredients

  • 2 cups fresh or frozen fruit (such as strawberries, raspberries, blueberries, or mixed berries)

  • 2 tablespoons chia seeds

  • 1-2 tablespoons honey or maple syrup (adjust to taste)

  • 1 teaspoon vanilla extract (optional)

  • Water, as needed

Directions

  • Prepare Fruit: If using fresh fruit, wash and hull (if necessary) the fruit. If using larger fruits like strawberries, chop them into smaller pieces. If using frozen fruit, thaw it slightly before proceeding with the recipe.
  • Cook Fruit: In a small saucepan, combine the prepared fruit with a splash of water (about 1/4 cup) over medium heat. Cook the fruit, stirring occasionally, until it begins to break down and release its juices, about 5-10 minutes.
  • Mash Fruit: Once the fruit is softened, use a fork or potato masher to gently mash it to your desired consistency. If you prefer a smoother jam, you can blend the fruit mixture with an immersion blender or regular blender until smooth.
  • Add Chia Seeds: Stir in the chia seeds, honey or maple syrup, and vanilla extract (if using). Continue to cook the mixture over low heat, stirring frequently, for another 5 minutes. The chia seeds will absorb the liquid and help thicken the jam.
  • Adjust Sweetness: Taste the jam and adjust the sweetness if necessary by adding more honey or maple syrup to taste.
  • Cool and Store: Remove the saucepan from the heat and let the jam cool for a few minutes. Transfer the jam to clean glass jars or containers with tight-fitting lids. Allow the jam to cool completely before sealing the jars.
  • Freeze: Once cooled, place the jars of jam in the freezer. The jam will thicken further as it cools in the freezer. It will keep well in the freezer for up to 3 months.
