NEEDFUL INGREDIENTS FOR THIS RECIPE:

  • 1 tablespoon olive oil

  • 1 lb lean ground turkey

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1 bell pepper, diced (any colour)

  • 1 cup cherry tomatoes, halved

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup quinoa, rinsed

  • 2 cups low-sodium chicken or vegetable broth

  • 1 tablespoon taco seasoning

  • Salt and pepper to taste

  • Juice of 1 lime

  • Fresh cilantro leaves for garnish

  • Sliced avocado for serving

Directions

  • Sauté Ground Turkey and Aromatics: Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until fragrant. Add the ground turkey to the skillet, breaking it up with a spatula, and cook until browned and no longer pink, about 5-7 minutes.
  • Add Vegetables and Quinoa: Once the turkey is cooked through, add the diced bell pepper, halved cherry tomatoes, corn kernels, black beans, and rinsed quinoa to the skillet. Stir to combine all the ingredients evenly.
  • Cook the Quinoa: Pour the low-sodium chicken or vegetable broth into the skillet. Sprinkle the taco seasoning over the mixture and stir well to incorporate. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 15-20 minutes, or until the quinoa is cooked and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  • Finish and Serve: Once the quinoa is cooked, remove the skillet from heat. Squeeze the juice of 1 lime over the skillet and stir to combine. Season with salt and pepper to taste.
