  • 1 lb Italian sausage, casings removed

  • 2 tablespoons olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 2 cups diced potatoes (such as Yukon gold or russet)

  • 1 bell pepper, diced (any colour)

  • 1 zucchini, diced

  • 1 cup cherry tomatoes, halved

  • 2 cups baby spinach leaves

  • Salt and pepper to taste

  • 1 teaspoon Italian seasoning

  • Grated Parmesan cheese for serving (optional)

  • Chopped fresh parsley for garnish (optional)


  • Cook the Italian Sausage: In a large skillet or frying pan, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage to the skillet, breaking it up with a spoon. Cook the sausage, stirring occasionally, until browned and cooked through, about 8-10 minutes. Once cooked, transfer the sausage to a plate and set aside.
  • Prepare the Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil if needed. Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent and fragrant, about 2-3 minutes. Add the diced potatoes to the skillet and cook, stirring occasionally, until they begin to brown and soften, about 8-10 minutes.
  • Combine the Ingredients: Once the potatoes are partially cooked, add the diced bell pepper and zucchini to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender. Return the cooked Italian sausage to the skillet, along with the halved cherry tomatoes and baby spinach leaves. Season the hash with salt, pepper, and Italian seasoning, adjusting to taste.
  • Finish and Serve: Cook the hash for an additional 2-3 minutes, or until the spinach wilts and the tomatoes soften slightly. Remove the skillet from heat and serve the Italian Sausage Hash hot.
