  • 1 lb gnocchi (store-bought or homemade)

  • 1 tablespoon olive oil

  • 4 ounces pancetta, diced

  • 2 cloves garlic, minced

  • 2 cups cherry tomatoes, halved

  • Salt and pepper to taste

  • 1/4 teaspoon red pepper flakes (optional)

  • 1/4 cup grated Parmesan cheese

  • Fresh basil leaves for garnish


  • Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi to the boiling water and cook according to package instructions, or until they float to the surface. If using homemade gnocchi, they will cook faster, usually in about 2-3 minutes. Once cooked, drain the gnocchi and set aside.
  • Prepare the Pancetta and Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the diced pancetta to the skillet and cook until crispy and golden brown, about 5-7 minutes. Add the minced garlic to the skillet and sauté for 1-2 minutes, until fragrant.
  • Combine Gnocchi and Tomatoes: Add the halved cherry tomatoes to the skillet with the pancetta and garlic. Cook, stirring occasionally, until the tomatoes start to soften and release their juices, about 3-4 minutes. Season with salt, pepper, and red pepper flakes (if using), adjusting to taste.
  • Finish and Serve: Add the cooked gnocchi to the skillet with the tomato and pancetta mixture. Toss everything together gently until the gnocchi are evenly coated with the sauce. Sprinkle grated Parmesan cheese over the gnocchi and toss again to combine. Remove the skillet from heat and garnish with fresh basil leaves.
