  • 500g ground pork

  • 1 tablespoon olive oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 medium zucchini, diced

  • 1 red bell pepper, diced

  • 1 cup baby spinach, chopped

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper to taste

  • 1 cup shredded mozzarella cheese

  • 12 manicotti pasta shells

  • 2 cups marinara sauce

  • 1 cup shredded mozzarella cheese

  • Fresh parsley, chopped, for garnish (optional)

Directions

  • Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 2-3 minutes. Add the ground pork and cook until browned, breaking it up with a spoon as it cooks.
  • Add Vegetables: Stir in the diced zucchini and red bell pepper. Cook for another 5-7 minutes, or until the vegetables are tender. Add the chopped spinach, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes until the spinach is wilted and the flavours are well combined. Remove from heat and let the filling mixture cool slightly.
  • Cook Manicotti Shells: Meanwhile, cook the manicotti pasta shells according to the package instructions until al dente. Drain and rinse the shells under cold water to stop the cooking process. Set aside.
  • Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
  • Fill Manicotti Shells: Using a spoon or piping bag, carefully fill each cooked manicotti shell with the pork and vegetable filling mixture, ensuring they are evenly filled. Arrange the filled manicotti shells in the prepared baking dish in a single layer.
