After some cooler summer weather we were blessed with sunshine and warmer temperatures this weekend and I’ve been taking it all in. Our Sneaky Sunday recipe today is strawberry and lemon popsicles which are the perfect way to treat your little ones without feeling guilty about it. Literally all they take is strawberries, fresh lemon juice, honey, and kiwi slices are optional. So simple yet tasty without all the bad stuff.
My daughter has a dairy allergy so she isn’t able to enjoy traditional ice cream, but she loves dairy alternative cool treats, like these strawberry and lemon popsicles. However the store bought ones are often filled with sugar and other ingredients that I don’t feel good about. So I decided, why not make my own. This was the first time I made homemade popsicles and they were perfect. The lemon offers the tartness, while honey adds additional sweetness to the already sweet taste of strawberries. Aubrey, my daughter licked the popsicle stick clean when she tried these, and I know your little ones will enjoy them too! You will need a popsicle mold and some sticks. So if you don’t already have some, I would recommend finding them so you can replace those store bought popsicles with these!

- 2 cups strawberries, stems removed and cut in halves, plus a few sliced
- ½ cup fresh lemon juice
- 2 tablespoons honey
- 1 kiwi, sliced (optional)
- In a blender combine the halved strawberries, fresh lemon juice, and honey. Puree until smooth.
- Pour into popsicle molds.
- Add fresh slices of strawberry and kiwi in each. (optional)
- Place in freezer. Once frozen, enjoy!
