  • 1 large onion, sliced

  • 2 medium potatoes, diced into small cubes

  • 6 eggs

  • 2 tablespoons olive oil

  • 1 teaspoon chilli powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • Fresh cilantro, chopped, for garnish (optional)

  • Warm tortillas, for serving (optional)

  • Salsa, avocado, sour cream, or shredded cheese, for topping (optional)


  • Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or aluminium foil for easy cleanup.
  • Prepare Vegetables: In a mixing bowl, combine the sliced bell pepper, sliced onion, and diced potatoes. Drizzle with olive oil and sprinkle with chilli powder, cumin, paprika, salt, and pepper. Toss until the vegetables are evenly coated with the seasoning mixture.
