This past weekend together with our families we were able to enjoy a lovely weekend away near Kincardine, Ontario. We lucked out with the weather, it was such a gorgeous weekend so we spent lots of time at the beach, parks, and the local community garden. We also enjoyed lots of good food, as you can imagine with the two of us in the kitchen we were busy cooking up a storm. But with good food, sometimes you need a good refreshing drink, like this fruity summer punch.
When you’re entertaining in the summer there’s no better way to complete a meal or snack with some fresh punch, especially because it’s so simple to make. This punch is literally just a mix of ginger-ale and pineapple juice and infused with fresh fruit and mint to bring out more flavour. This punch is great for the kids as is, and gets them eating some of the fresh fruit it’s made with. If you’d like to make it alcoholic substitute the ginger-ale with some sparkling white wine for the adults. Hope you enjoy this easy to make punch like we did while sitting on the deck looking at the lake. Ugh, bring us back!

Nic and Nat
- 2 litre ginger-ale
- 1 litre pineapple juice
- 1 orange, peeled and separated
- 1½ cup strawberries, halved
- 1 cup pineapple, cut in cubes
- fresh mint
- Add the ginger-ale and pineapple juice in a punch pitcher
- Add mint to your liking and muddle with the juice
- Add fresh fruit. Chill and serve.
